A crafted fine dark 80 chocolate. Deep roast & cherry finish. Made from bean to bar here in Calgary, AB. by Roaster - Refiner - Chocolatier Ian Shaw uaing Peru origin cocoa beans. The beans are roasted, cracked, husk removed, the resulting cocoa nibs are stone ground into pure cocoa mass (approx 36 hrs). Then, organic cane sugar, cocoa butter, and vanilla are added, and another 36 hours of grinding, refining & conching ensues. Finally the chocolate is poured into bars, and packaged as you see here.
Ingredients: Cacao liquor, cacao butter, cane sugar, vanilla.
VEGAN & FREE OF dairy, gluten, peanuts, tree nuts, soy, or GMOs.
